Cabbage Poriyal

Cabbage is an important member of the brassica family which also includes broccoli, cauliflower and brussel sprouts.Cabbage is packed with vitamins, minerals, and fibre, low calorie veggie.It provides anti-ageing benifits to the skin,stimulates hair growth,control hairfall.

How to select?

Choose cabbage heads that are large,firm and dense.They should be heavy for their size with bright, crisp and colourful,shiny leaves which are devoid of cracks, blemishes, bruises or insect nibbles.     
Avoid cabbages that are fluffy or whose outer leaves have been stripped away.If the leaves are beginning to seperate from the stem,it indicates that the cabbage has aged.
Avoid buying cabbage that is either halved or shredded as precut cabbage loses its valuable Vitamin C content.

Thats it : Boil cabbage - Seeding - Coconut mixture
Cooking Time :30mins  Serves :3 persons

Ingredients:
Cabbage
2Cups
Moong dal
2tbsp
Peas
¼ Cup
Coconut
3 tbsp
Green chilli
1
Cumin seed
1tsp
oil
1tsp
Mustard
1tsp
Onion
1big
Curry Leaves
1sprig
Salt
req


Procedure:
1.Remove the outer leaves of the cabbage and chop or grate the cabbage.


2.Heat a kadai ,add moong dal and dry fry for a minute ,then add ¼ Cup water and add frozen or soaked peas,chopped cabbage and close the lid,cook for 3 mins. Meanwhile stir in between from getting burnt.


3.Heat a kadai ,add oil, mustard, when it splutters, add curry leaves ,onion ,dry grinded mixture (coconut,gr.chilli,cumin seed) fry for a minute then add it to the cabbage mixture.Mix well and switch off the flame.

5. Serve hot with any side dishes / kuzhambu.


Notes:
1.Dont Over fry the onion till brown,cabbage fry looks like yellow or in white colour.
2.If you use frozen peas do like the above procedure otherwise soak 5 hrs and do the same.
How to store?
Always store with the head part as it stay longer.
It can be stored upto two weeks in the refrigerator.
