Aviyal Recipe is a traditional dish and mainly
served at Tamil nadu marriages and festival time also.Aviyal is easy to prepare
and it can prepared with mixed veggies and curd.it goes well with
sambar,vathakuzhambu and adai also.
In my home, when i ask My Man about festival recipes,he immediately told Sambar,Avial,any Poriyal,Pappad....which is our traditional festive Menu.Nowadays am very interested to include this recipe every week as My Little Prince also likes aviyal very much.

Recipe :
Thats it : Cook veggies – Grind Coconut - Seeding
Cooking time : 30mins Serves : 2 Persons
Ingredients :
Veggies
{Carrot,beans,potato,raw plantain(vaazhakkai),brinjal,drumstick}

Curd
|
¼ Cup
|
Coconut
|
¼ Cup
|
Green chilli
|
2 small
|
Cumin seed / Jeera
|
½ tsp
|
Coconut Oil
|
1 tsp
|
Curry Leaves
|
1 sprig
|
Procedure:
1.Cut all the vegetables lengthwise.Add
immersing level of water and pressure cook for one whistle with high flame.
2.Meanwhile grind
coconut, jeera, green chilli with less water till smooth.
3.After pressure releases drain the water, add coconut mixture and curd.Mix well.Cook for 3 mins and switch off the flame.
4.Heat a seeding pan, add coconut oil ,after it splutters ,add curry leaves then add it to aviyal.
Traditional Aviyal is Ready....!
Serve with Sambar,Pappad or Adai.
Notes:
1.You can also cook
by stove top method instead of cooker.In that case ,it takes 10 mins to cook
veggies.
2.You can also add white pumbkin, colocosia(seppankizhangu), yam(senaikizhangu) .
2.Pressure cooking
high flame is to retain crunchiness.
3.Coconut oil gives
nice flavour to Aviyal.
4.Sourness of curd
gives yummy taste to aviyal.
5.Grinding Onion is
optional.
