Carrot Poriyal / Carrot Stir Fry

          Carrots are Vitamin-rich root vegetable.Sweet and crunchy carrots are rich in anti-oxidants,vitamins and dietary fiber.

Carrots are used in many dishes whether cooked or raw like refreshing juices,halwa,stir fry and salads too.



Carrot Stir-Fry :

Thats it : Grate carrots - Fry
Cooking Time : 15 mins  Serves : 2 persons
Ingredients:
Carrot
2 medium size
Oil
1tbsp
Mustard
1tsp
Urad dhal
½ tsp
Curry Leaves
1sprig
Coconut
3tbsp
Green Chilli
1
Cumin seed/Jeera
½ tsp

Procedure:

1.Wash the carrots well ,cut both ends and grate it finely using grator.
 

2.Dry grind coconut,green chilli, jeera by mixie without water.

3.Heat a kadai,add oil,mustard ,after it splutters add Urad dhal,after it browns,add curry leaves then grated carrot and mix well.Fry for two mins.Add very little salt, coconut mixture then fry for a minute. Switch off the flame and close the lid.

Serve hot with sambar,pappad.

Notes:
Use very little salt as its sweetish taste tastes well.
