Rava Idly / Semolina Idly / Sooji Idly(Both Instant & Soaking Version)

Rava Idly is a soft textured idly which is originated from Karanataka Cuisine in the name of Semolina Idly / Semolina Dumplings.Semolina Idly was invented by the popular restaurent Chain,Mavalli Tiffin Rooms(MTR) of Bangalore.

Rava Idly : Soaking Version


I tried rava idli so many times ,everytime it comes out well.The flavour of tempering and the crunchiness of coconut bits,broken cashews are the highlights in Rava Idly.Here am posting both instant version & soaking version,you can pick as per your time convinience.Ghee dashed rava idly with coconut chutney,sambar,coriander chutney are the best combos ever.I usually prefer instant version for its less timing and crumbled cake-like texture.Last week i prepared by using soaked version of Rava Idly using Chef Venkat Bhat's recipe,it also gives nice and soft idlies.

For instant version ,you have to roast rava/semolina and add ings. then make idlies immedietely.For soaking version , you have to soak rava with curd for 20mins,now rava would have 5times bigger in size,then start make your idlies.

Both versions have same ingredients with the different quantity of curd & water.

Rava Idly / Semolina Idly / Sooji Idly :

Ingredients :
Rava - 1Cup

{Thick Curd - 1/2 Cup,
Water - 1/2 Cup} (For Instant Version)
OR
Thick Curd - 2Cups (For Soaking Version)


Ghee / Oil - 1tbsp
Mustard - 1tsp
Channa shal - 1tsp
Green chilli - 2
Ginger - 1"inch
Asafoetida / Hing - 1/4 tsp
Cashew nuts - 5
Coconut Grated / Bits - 2tbsp
Grated carrot - 2tbsp
Curry Leaves - 1sprig
Coriander Leaves - 1/2 Sprig
ENO Fruit Salt OR Baking soda - 1tsp OR 1/2 tsp

a)Instant Version
Thats it : Seeding,Roast Rava - Mix ings. - Steam
Total Time : 20mins
Serves : 2Persons (10 Idlies)

Preparation :
# Finely chop green chillies,ginger,cashew nuts,curry leaves,coriander leaves.

1.Heat a pan in a low flame,add ghee/oil ,add mustard,after it splutters,add urad dhal,channa dal,green chilli,ginger.hing,cashew nuts,coconut bits,after it browns,add curry leaves,grated carrot.Now add rava to it and fry for 3mins and switch off the flame.




2.Add curd + water mixture,salt,chopped coriander leaves,ENO Fruit salt Or Baking Soda.Mix well without any lumps.After adding Fruit Salt/Soda it makes bubbles and dont let sit the batter for longer time.




3.Idly Making Method :
i)Boil water in idli pot in medium flame,meanwhile.grease the idli mould plates with oil/ghee.Now to garnish add fried cashew/1tsp of grated carrot in every idli mould,then pour the batter till the 3/4th portion of the mould.
ii).After water starts boiling arrange the plates inside the idli pot and cover it.Cook for 10-12mins.
iii).Reduce the flame to low.To check if it is fully/properly cooked or not,just insert toothpick or knife.If it comes out with little batter cook further for 2-3mins.
iv).If it comes out clean switch off the flame and rest it for 2-3 mins.
v).Take the idlies out of the mould by using wet spoon.It comes out clean from the mould.

b)Soaking Version
Thats it : Soak Rava & Curd - Mix Ings. - Steam
Total Time : 30mins
Serves : 2Persons (8 medium sized Idlies)

Preparation :
1.Soak 1Cup of rava ,2Cups of curd,1tsp of ghee,salt for 20mins.Meanwhile,grate carrot,finely chop green chillies,ginger,cashew nuts,curry leaves,coriander leaves.



After the soaking time the batter looks thick.Add carrot,coriander leaves to the mixture.

2.Heat a seeding pan in low flame,add ghee/oil ,add mustard,after it splutters,add urad dhal,channa dal,green chilli,ginger.hing,cashew nuts,coconut bits,after it browns,add curry leaves.Add to the rava-curd mixture.



Add ENO fruit salt OR soda.Mix well and make idlies.After adding fruit salt/soda dont rest the batter.
