Blueberry Muffins ( Eggless Version )


Blueberry Muffins are so easy to make and taste is also so yummy.I tried with basic vanilla cake recipe.First time i bought blueberries from shop but we are not satisfied with that new taste so i planned to bake muffin with these blueberries.

Blueberries are very rich in vitamin C which reduces intraocular pressure,decreasing the potential for developing the galucoma(eye problems).It reduces cancer risk , improves heart health,fights UTIs (Urinary Tract Infections) and boosts brain health.


These Muffins are tasty with good texture.Adding Orange / Lemon zest gives mild sourness to the muffins.If  you are not fond of adding blueberries,you can replace it with same amount of chocochips to have chocochips muffins.

Blueberry Muffins :
Thats it : Make Vanilla CakeMix - Add Blueberries - Bake it 
Preparation Time & Preheating Time : 10mins
Baking Time : 18-20mins
Yields : nearly 10muffins ( i split as : 6 muffins + 1 small tin )

Ingredients :

Blueberries               1Cup

All Purpose Flour     1 1/2 Cup
Corn Flour                3tbsp
Curd / Plain yogurt   1Cup
Oil                             1/2 Cup
Sugar                         3/4 to 1Cup
Orange / Lemon zest 1tbsp
Baking Powder          1 1/2 tsp
Baking Soda              1/2 tsp
Vanilla Essence         1tsp
   
Procedure :

# Wash the blueberries well and pat dry it.


# Add 1tbsp of flour to the blueberries and mix well to avoid settling down during baking.Keep aside.


# Preheat the oven at 180 deg C (10mins).

1.Add Curd and sugar to a wide bowl and mix well until sugar dissolves.


2.Now add baking powder & baking soda and mix well.Rest it for 2mins.Now the mixture looks frothy with some dots.


3.Add oil,vanilla essence and give a mix.


4.Sieve  the flour and corn flour and add it to the batter.Mix well without any lumps.


5.Add grated zest and blueberries and gently mix with a spatula (not with whisk).
   Scoop the batter and fill 3/4th portion of the cupcake moulds.


My tray has 6 moulds so i added the remaining batter to another small tin which is greased with butter.


6.After preheating is done,keep your tray inside the oven and bake it for 18-20mins.Check the cupcake by inserting the toothpick at the centre of the cake,if it comes out clean its perfect otherwise bake it for 2more mins.


If you want brown coloured muffins just brush the top portion of the baked cake with milk and bake it for 2mins.
