Ragi Adai / Roti [ Ragi / Finger Millet - Kezhvaragu / Keppai - Nachini ]


RAGI / FINGER MILLET - KEZHVARAGU / KEPPAI - NACHINI


Ragi Adai  is a very healthy and nutrition-rich breakfast.I prepared this traditional adai once in a month.My Man asked me to try this 2years before.He always give ideas about so many traditional recipes.It tastes great with coconut chutney.Serve it hot for the better taste.It keeps your stomach full for longer time.

Ragi Adai / Roti :
Thats It : Roast Ragi flour - Add Ings - Make Adais
Total Time : 30mins
Yields : 4Adais  (medium sized)

Ingredients :

Ragi Flour - 1Cup
Water - 3/4Cup+
Big Onion - 1[small onion tastes good]
Peanuts / Grated coconut - 2tbsp
Green Chillies - 2
Asafoetida/perungaayam - 1/4tsp
Curry Leaves - 1Sprig
Coriander Leaves - 1Sprig
Salt - 1tsp

Gingelly Oil / Nallennai - 4tsp
For patting - Banana leaf / Foil / flat silver lid

Procedure :

# Chop onion,green chillies,cor leaves,curry leaves.

# Dry roast peanuts and crush it[or grate coconut]

# Be ready with Banana leaf / Foil / flat silver lid

1.Heat a heavy-bottomed pan with low flame,add ragi flour and roast it till the aroma wafts(say 3mins).To prevent burning stir it continously for every 5secs.


2.In a wide bowl,add roasted flour,all the chopped ingredients,perungaayam,salt and roughly mix it.Now add water little by little and make a dough with specified amount of water[its like a loose dough].


2.Apply 3drops of oil to the foil surface.Now take small amount of loose dough and place it on the center of the foil.Gently spread the dough by pressing with your hands.


3.Heat a dosa pan in a low-medium heat,grease with oil then gently invert the foil to the center of the pan.Wait for 30secs then gently take the foil.Drizzle 1/2 tsp of oil around the adai.
Cook for 1min30secs and flip the adai,drizzle oil,cook for 1min30secs.


Serve Hot with Coconut Chutney !!!

Notes :
Another Method :
Without roasting ragi flour : 
1.Heat a pan,add 1tbsp of oil,mustard,urad dhal,chopped green chilli,curry leaves,onion,asafoetida fry it for 2mins then add it to the flour.Now add salt,peanuts/coconut to it.
2.Add water little by little (say 1/2cup of water) and make a tight dough.Then pat it on foil/banana leaf and cook the adais/rotis.
