Vegetable Rice

Vegetable rice is a comfort choice of one pot meal when we dont have much time to cook.You can add any veggies of your choice.I usually prepare gobi 65 or onion raita for my pulao/briyani and variety rice.Gautham loves cucumber raita so i prepared both all the time.I have used normal cooking rice to make this vegetable rice.You can call it as veg briyani too.You can also follow this same recipe with basmati rice to make veg briyani.

This recipe was clicked 2years before and sleeping in my drafts till today.I was not satisfy with this above main pics,but finally posted here without having interest to delete them.

Vegetable Rice :
Thats It : Soak rice - Fry everything - Pressure Cook
Total Time : 30mins
{For normal rice soaking time : 10mins
  For basmati rice soaking time : 20mins}

Ingredients :

Cooking Rice                    1Cup
[You can also use Basmati rice(check notes section)]

Oil                                    1tbsp
Ghee                                 1tbsp
Cloves / Lavangam           2 
Cinnamon stick / Pattai    1/2inch"
Cardamom / Elakkai         1Pod
Bay leaf                             1big
Star Anise                         1

Green Chilli                      1
Big Onion                         1
Mint Leaves                      1handfull
Tomato                              1
Ginger Garlic Paste           1tsp
Mixed Veggies                  1Cup
Curd                                  1tbsp
Turmeric powder              1/4tsp
Red Chilli Powder            1tsp
Coriander Powder             2tsp
Water                                1Cup
Coconut Milk                   1Cup
Salt                                   1tsp
Coriander Leaves             1/2handfull
Lemon juice                     1/2 (optional)

You can also use briyani masala 3tsp instead of red chilli powder and coriander powder.

Procedure :

# Wash & soak basmati rice for 10mins.
# Wash and chop all the veggies
[veggies-cubes,onion,green chilli & tomato-lengthwise]
# Wash mint and coriander leaves
# Extract coconut milk

1.Heat a cooker pan in medium flame,add oil ,1/2tbsp of ghee,cloves,cinnamon,star anise,cardamom,bay leaf and fry till the aroma arises(1min).Then add green chilli,onion fry for a min.Now add mint leaves and fry till it shrinks and the onion turns golden in colour.Add tomatoes and fry till it turns out mushy.

2.Add ginger garlic paste and fry for a min(i love the flavour),then spice powders,curd,veggies and cook for 3mins without getting burnt.

3.Drain the water completely from rice and add it to the cooker,gently mix it for a min without breaking the rice.Measure coconut milk and water,add salt.[check for the salt and spice level in this step]

4.Bring it to boil,close the lid and pressure cook for 2whistles.Switch off the flame.

After pressure releases,open the lid,add 1/2tbsp of ghee,coriander leaves and gently stir it with flat ladle/spatula[i use my dosa flipper].Serve it hot with any fries and raita.

Healthy and Yummy Vegetable Rice is ready !!!

Notes :
1.For basmati rice :
 * Soak it for 20mins
 * Add 1/2Cup water , 1Cup coconut milk
 * Optional :Roast the soaked and drained rice in ghee for a couple of mins to get shiny texture.
2.You can also use briyani masala 3tsp instead of spice powders.
3.You can squeeze 1/2 lemon after pressure cooking.
