Sundal is the great and healthy snack.Sundal can be offered to Goddess Durga during Navaratri Festival.Peanut is popularly known as Groundnuts,which are rich in essential nutritients like fiber,protein,minerals,monounsaturated and polyunsaturated fatty acids,and antioxidants.
When i went to my friend Padma home for Navaratri,i tasted peanut sundal,it was so tasty.My Man asked me to try this for Saraswathi Pooja day.tried it for the first time and it came out very well.This is the second time again and i thought to post too.Try this and enjoy this healthy snack.
Peanut Sundal / Verkadalai Sundal :
Thats It : Soak peanuts - Cook - Season it
Soaking Time : 6-8hrs (Overnight)
Cooking Time : 15mins
Serves : 2-3persons

Ingredients :
Peanuts 1Cup
Salt 1tsp
Oil 1tbsp
Mustard 1tsp
Urad dhal 1/2tsp
Asafoetida 1/4tsp
Red Chillies 2
Curry Leaves 1Sprig
Coconut 1/4Cup(grated)
Salt 3-4pinches
Procedure :
#Wash & soak peanuts for 6-8hours Or overnight.Drain the water.
1.Add soaked peanuts,immersing level of water,salt into the pressure cooker and pressure cook for 6whistles in medium flame.Drain the water.
3.Heat a pan in low flame with oil,add mustard seeds,after it splutters add urad dhal,red chillies,asafoetida,curry leaves,give it a stir.Now add cooked peanuts,salt(if required),mix it and cook for a miute.Switch off the flame.Add grated coconut and mix it well.
Check for the salt and serve it !!!
Peanut Sundal is ready !!!
