YAM FRY (2Methods) l Elephant Yam Fry l சேனைக்கிழங்கு வறுவல் l Suran Fry l Selva's Kitchen



Yam fry is a tasty and crispy sidedish for any maincourse.i usually prepare YAM MASIYAL which is my family favourite.Recently ,i started frying this yam as my MIL prepared this way.We love this fry ,even kids will love to eat. Most of us doesn't like this vegetable as it has itching property,after eating you can feel some irritation in your throat and tongue.Cleaning and cutting this vegetable is little hard and time-consuming process but worth the effort.Believe me ,adding tamarind water ignores itching property. 



How To Avoid Itchiness From Yam ???
* Choose old-aged Yam from markets as it has less itching property. 
* Cooking Yam with turmeric powder ,tamarind water avoids itching. 
* Wear gloves /disposable gloves or apply sesame oil/nallennei to your hands to avoid itching.

Elephant Yam Fry :
Thats It : Cut Yam - Parboil Yam Pieces - Fry
Cooking Time : 25-35mins
Serves : 2Persons

How To Clean and Cut Elephant Yam ???



Use gloves/disposable gloves or apply sesame oil (nallennei) to your hands to avoid itchiness.Use Sharp knife and b carefull while make a cut as it is hard.

a)First remove hard outer skin then cut by half and wash it to remove sand and dirts present in yam.


b)Cut a big deskinned yam into small blocks.Take a block and cut into lengthwise strips and make small dices OR Make medium thickness slices for tawa yam fry..


METHOD 1 : Yam Tawa Fry 
Ingredients :

For Cooking Yam :
Yam       1Small sized(9slices)
Tamarind     gooseberry sized
Turmeric Powder    1/4tsp
Water   3Cups
Salt 1/2tsp

For Marination :
Sambar Powder  1tbsp
Red chilli powder  1/2tsp
Gram flour/besan flour/kadalai maavu   2tbsp
Rice flour / Arisi Maavu   1tbsp
Asafoetida/Perungaayam   2Pinches
Salt 2pinches
Water 1tbsp
Curry Leaves   1Sprig

Oil   2tbsp for drizzling

[You can skip sambar powder and add chilli powder 2tsp,coriander powder 1tsp,cumin powder 1/2tsp]

Procedure :

1.Soak tamarind in water for 5mins then squeeze out the juice and discard the pulp.Add Water(3Cups),(turmeric powder,salt,tamarind water into the pan.Bring to a boil,add yam slices and cook  for 2-3mins on high flame,dont over cook as it will be mashed.


2.After 3mins,check the yam piece with knife.It should be cooked but not mushy.Drain the water completely and keep aside.


3.Take a wide bowl add sambar powder,rice flour,beasan flour,asafoetida and salt,roughly mix it.Sprinkle 1tbsp of water and mix it well.Now add yam pieces and marinate/coat it well.Keep aside for 10mins.


4.Heat a tawa on low flame,drizzle some drops of oil,spread marinated yam pieces evenly on tawa.Fry it for 1min then drizzle some drops of oil over all the pieces.Now flip over all the pieces and again drizzle oil,curry leaves,cook for a min.At last flip over again and cook for 30secs and take out all pieces along with fried curry leaves.Serve it hot.


Tawa Yam Fry is ready !!!


METHOD 2 : Yam Fry 
Ingredients :

For Cooking Yam :
Yam       1Small sized(1 1/2Cups)
Tamarind     gooseberry sized
Turmeric Powder    1/4tsp
Water   3Cups
Salt 1/2tsp

For Marination :
Sambar Powder  1tbsp
Red chilli powder  1/2tsp
Gram flour/besan flour/kadalai maavu   2tbsp
Rice flour / Arisi Maavu   1tbsp
Salt 2pinches
Water 1tbsp

To Temper :
Oil   2tbsp 
Mustard  1tsp
Urad dhal 1/4tsp
Red chilli  1no
Asafoetida/Perungaayam   2Pinches
Curry Leaves   1Sprig

Garlic Pods 2 (for flavour)


[You can skip sambar powder and add chilli powder 2tsp,coriander powder 1tsp,cumin powder 1/2tsp]

Crush 2pods of garlic.


3.Heat a pan on low flame,add oil,add mustard,after it splutters,add urad dhal,asafoetida,red chilli,curry leaves then mix it once.Now add marinated yam pieces and fry it for 2mins.Add crushed garlic and toss for a min.Switch off the flame.


Yam Fry is ready !!!
