Dhokla is a popular Gujarati snack which is traditionally prepared with soaked chickpea/besan and some spices.If you have less time in hand you can prepare with besan/chickpea flour for making dhokla.It turned out so soft and tasty.A mouth-watering nutritious snacks which can be served to breakfast/dinner and snacks time too.

It tastes spicy,tangy and sweetness too.Final touch of adding seeding/tadka to the dhokla makes the dish more flavourful. It tastes yummy and keeps your stomach full for longer time.

You can prepare spongy dhokla within 25mins by steaming method and can also within 10mins by using microwave version including the preparation time.In this post,we will learn how to make instant dhokla(2types) with step by step pictures.

Dhokla / Khaman Dhokla Recipe :
Thats It : Mix besan flour+curd +fresh spices - Steam Or Microwave - Add Tadka/Seeding
(including preparation time)
Serves : 4Persons
Ingredients :
Chickpea/Besan/Gram Flour 1Cup
Rava / Sooji / Semolina 1tbsp
Curd 1/2Cup
Water 1/2Cup
Green Chilli 2nos (crushed)
Ginger 1"piece (crushed)
Turmeric Powder 1/4tsp
Asafoetida/Himg/Perungayam 2pinches
Coriander Leaves 2tbsp
Salt 1tsp
Lemon Juice 1tsp (1small lemon)
ENO fruit salt 1tsp(or baking soda 1/2tsp)
Oil 3drops(for greasing)
To Temper : (Tadka/Seeding) :
Oil 1tbsp
Mustard seeds / kadugu 1tsp
Cumin seeds / Jeeragam 1/2tsp
Sesame seeds / ellu 1tsp
Sugar 1tbsp
Green Chilli 1
Curry Leaves 2Sprig
Water 2tbsp
Garnishing :
Grated Coconut 3tbsp
Coriander Leaves few
Procedure :
1.Take a mixing bowl,add besan flour,turmeric powder,asafoetida,rava,green chilli,ginger,curd,coriander leaves into it.Gradually add water and make it as a lump-free batter.Now add salt and lemon juice and mix it well.The batter should be in thick flowing consistency.
2.Take a idli pot/steamer pot ,add water and close the lid to make the water boiled.Heat on low-medium flame.
3.Finally add ENO fruit salt to the batter and mix it well.Always add ENO fruit salt/baking soda at the final stage otherwise it leads to stomach problem because of its reaction.After adding this ingredient do not rest the batter.
4.Now choose the bowl/plate/tray which fits into the steamer/idli pot.Grease it with oil.Pour the batter into the bowl.
5.Place the batter filled bowl carefully inside the boiling water and close it with lid.Steam it for 8-10mins or until the inserted toothpick/knife/spoon at the center comes out clean.Switch off the flame.
Now take out the bowl,rest it/cool down for 5-7mins then slowly loosen up the sides with knife,invert it.
6.Heat a seeding pan on low flame,add oil,mustard seeds,after it splutters add cumin seeds,sesame seeds,green chilli,curry leaves.Switch off the flame.Now add sugar,water and mix it well.
7. Immediately spread the tadka on the top of the steamed dhokla.Sprinkle grated coconut and few curry leaves.Slice and serve it.
Dhokla is ready !!!
(steaming version)
DHOKLA - Microwave Version
Follow the steps 1,2,3 (Prepare the same dhokla batter)
4.Choose the baking bowl/tins/pan and grease it with oil.Pour the batter into the tin.[i chose these cute 2little loag & spring-form baking pans]
Microwave it for 5mins or until the inserted toothpick/knife/spoon at the center comes out clean.Cool dowl for 5mins.

5.Meanwhile, heat a seeding pan on low flame,add oil,mustard seeds,after it splutters add cumin seeds,sesame seeds,green chilli,curry leaves.Switch off the flame.Now add sugar,water and mix it well.
[you can prepare this tadka by using microwave also with proper micrwave safe bowl]
6.Invert it and immediately spread the prepared tadka over the microwave dhokla.Sprinkle grated coconut and few curry leaves.Slice and serve it.
5min-Instant Dhokla is ready !!!
